Initially, I had planned to prepare a chocolate cake but since I burnt the chocolate in the microwave didn’t have chocolate, I had to improvise… We had a lemon cake last week and just plain cake is too boring, so I tried a coffee cake by leaving the chocolate away and adding two espresso shots and further 50 g of flour… The result is yummy!
2 espresso shots (I used the very strong purple decaf from Nespresso)
1 teaspoon baking powder
1 pinch of salt
Preheat the oven on 170 degrees. Beat the egg whites with the salt. Melt the butter. Beat the sugar with the butter. Slowly add a little bit of flour, a little bit of melted butter, a little bit of espresso, continue until you have used it all, add the baking powder. When everything is well mixed, very slowly add the beaten egg whites. Put in the baking pan and in the oven for 50 minutes. Enjoy!
